Smoked Duck with Mandarin Soy Glaze
Recipe
Dry the duck’s skin and season with 1:1 salt and pepper ratio. Baste the duck with a mixture of 1 tbsp low sodium soy sauce and 2 tbsp of honey. Slice one medium sweet onion and three mandarin oranges and stuff the duck.
Smoke at 275° until the breast reaches 155°, then glaze the duck with the recipe below.
Continue smoking until the duck reaches 165° in the breast. Prick the skin of the duck with a meat thermometer multiple times to allow the fat to render out some.
Rest for 10-15 minutes and enjoy!
Glaze Recipe
Combine the following:
- Juice from 1 Mandarin orange
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp soy sauce
- 1/8 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
