Smoked Mini-Meatloaves

Recipe
Combine and knead in a large mixing bowl:
- 1.5 lbs. of ground meat
- 1/2 sweet onion, diced
- 2/3 cup panko breadcrumbs
- 1 tbsp bbq sauce
- 1 tbsp mustard
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 egg
Separate the meat mixture into six portions and form into small loaves. Smoke at 275° until reaching 140-150° internal temperature. Baste with our glaze (recipe below). Continue cooking until the loaves reach 160-165° internal temperature. Allow 3-5 minutes to cool, then enjoy!
Glaze Recipe
Combine
- 1/2 cup ketchup
- 1/2 tbsp horseradish mustard or Dijon mustard
- 1/2 cup brown sugar
- 1/2 tsp cumin
- 1/2 tsp black pepper
Stir and enjoy!
