Pulled Pork
Recipe
Rub pork with mustard and coat with pork rub. Score fat in a checkerboard pattern and season last to cook fat-side-up. Smoke at 250°-275° until 160° internal temperature (IT). Wrap tightly in foil and continue to smoke until ~206° internal temperature. Remove and wrap with brown sugar and butter, resting in a dry cooler for at least 1.5 hours. Pull and serve. Enjoy!
Pork Rub Recipe
- 3 tsp salt
- 3 tsp black pepper
- 2 tsp paprika
- 2 tsp powdered honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1/2 tsp mustard powder
- 1/2 tsp coriander
- 1/4 tsp cayenne pepper
Mix ingredients together in a bowl or shaker using a fork to ensure thorough blending. This recipe is sufficient to season a whole pork butt and have plenty of leftovers for recipes like this.
Pasta Salad Recipe
Boil garden rotini until tender. Drain and spray with cold water until noodles are chilled. Place in a bowl and toss with Olive Garden Italian Dressing. Enjoy!
